You already know the framework. Your body does not see “dinner.” It breaks everything down into three raw materials, protein, carbohydrates, and fat, then uses them to build, fuel, and maintain itself.

That foundation is worth keeping. But it leaves out something equally important: two meals can hand your body the same three raw materials and arrive in completely different condition.

White sandwich bread and sprouted whole-grain bread both deliver carbohydrates. One arrives with its fiber, minerals, and B vitamins largely intact. The other left the mill considerably lighter. Same raw material either way. What changes is everything that came with it.

This is the deep dive on that difference.


The principle

Your body pulls the same three raw materials from every meal. The quality of a food is not which material it delivers. It is what else arrives alongside it, and how much of the original package survived.

That single idea is why DD keeps returning to the phrase “created by nature, minimally processed.” It is not a moral position about food. It is a practical one about delivery.

Raw material one: protein

Protein builds and repairs. Muscle, skin, hair, enzymes, and the immune cells doing quiet maintenance right now are all assembled from amino acids your body pulls out of what you eat.

Whole-food organic sources, plant-forward: lentils, black beans, chickpeas, quinoa, hemp seeds, pumpkin seeds, almonds, walnuts, and green peas. Then, if you include them, eggs and lean meats.

Here is the part that usually gets skipped. Most cereal grains are low in lysine, one of the nine essential amino acids, which limits how much of their protein your body can actually put to work. Quinoa is unusual. It carries lysine in meaningful amounts, which is why its protein digestibility-corrected amino acid score lands around 0.67 to 0.93 depending on variety, against roughly 0.56 for rice and 0.42 for wheat. It also runs 15 to 19 percent protein by weight, where rice sits at 6.6 to 8.4 percent.

Whole sources also arrive carrying things an isolated protein powder does not have: fiber, magnesium, zinc, and folate, all in the same bite.

Raw material two: carbohydrates

Carbohydrates are your primary fuel. Your brain alone runs on roughly 120 grams of glucose per day (Mergenthaler et al., Trends in Neurosciences, 2013). Carbs are not an optional extra to be negotiated away.

Whole-food organic sources: sprouted whole-grain bread, quinoa, rolled oats, sweet potatoes, winter squash, berries, apples, and the lentils and beans that also appeared under protein.

Two swaps carry most of the weight here.

Sprouted bread instead of conventional bread. Sprouting wakes the grain up. Enzymes begin breaking starch into simpler sugars and protein into free amino acids, which is why sprouted grains are generally easier to digest. Sprouting also lowers phytic acid, the compound that binds minerals like iron and zinc and carries them out of the body unabsorbed. Reported reductions vary widely by grain, roughly 98 percent in oats, 84 percent in rye, and 63 percent in wheat (Elliott et al., Nutrition Bulletin, 2022). Less phytate generally means more of the minerals already in that grain become available to you.

Quinoa instead of rice. Same swap logic, different mechanism. You are not only choosing a carbohydrate. You are choosing one that brings a far more complete protein along with it.

Raw material three: fat

Fat builds cell membranes, supports hormone production, cushions organs, and makes the fat-soluble vitamins A, D, E, and K absorbable at all.

Whole-food organic sources: avocados, olives and cold-pressed olive oil, walnuts, almonds, flaxseed, chia seeds, hemp seeds, pumpkin seeds, and coconut.

Fat also changes what you get from everything sharing the plate with it. When researchers added avocado to salad, absorption of alpha-carotene, beta-carotene, and lutein rose to roughly 7.2, 15.3, and 5.1 times the levels measured after the same salad eaten without it (Unlu et al., The Journal of Nutrition, 2005). The vegetables had not changed. The delivery had.

That is the strongest practical argument against a fat-free salad.

You may be paying for nutrients you are not absorbing.

Why organic, specifically

The largest review on this question pooled 343 peer-reviewed publications and found pesticide residues occurring about four times more frequently in conventional crops, along with higher cadmium concentrations and meaningfully higher levels of several antioxidant compounds in organic crops (Barański et al., British Journal of Nutrition, 2014).

Worth saying plainly: an organic label is not a health guarantee, and organic ultra-processed food is still ultra-processed. Organic is a sourcing decision layered on top of a whole-food decision, not a replacement for one.

Pattern: how to choose in the moment

  • When a food names a raw material but hides the package, look for what was removed. “High protein” on a bar tells you a material is present. It does not tell you what came with it.
  • When choosing a grain, ask whether it was sprouted, whole, or refined. That one question sorts most of the bread aisle.
  • When eating vegetables, put a fat source in the same meal. Avocado, olive oil, or a handful of nuts changes what you absorb.
  • When a meal feels incomplete, name the missing material. Usually it is protein or fat, and usually the fix is one ingredient.

Protocol: the three-material check

Under two minutes, and it needs nothing but your next meal.

1. Look at the plate and name the protein. If you cannot find one, add a scoop of lentils, a spoon of hemp seeds, or a handful of pumpkin seeds.

2. Name the carbohydrate, then ask what condition it is in. Refined, whole, or sprouted.

3. Name the fat. No fat anywhere usually means you are absorbing less than you think from the vegetables.

4. Make one swap this week, not five. Sprouted bread in place of your usual loaf, or quinoa in place of rice. One swap that survives a month beats five that survive a weekend.

Proof: what to watch for over two to four weeks

Watch steadiness rather than the scale. Many people notice fewer sharp hunger swings between meals, since whole sources release glucose more gradually. Some notice meals feel finished at a smaller volume, which usually follows fiber and protein arriving together.

Track one thing, not six. Hunger between meals is the most honest signal.

Myth vs. reality

Myth: Sprouted bread is a marketing term.

Fact: Sprouting is a measurable process with measurable effects. Enzyme activity converts starch and protein into simpler forms and reduces phytic acid, which is associated with better mineral availability. The size of the effect varies considerably by grain and by producer.

Myth: Quinoa is just a trendier rice.

Fact: Nutritionally they are not close. Quinoa carries roughly twice the protein and a far more complete amino acid profile, largely because it supplies the lysine most cereal grains lack.

Myth: Fat should be minimized to make a meal healthier.

Fact: Fat-soluble vitamins require fat to be absorbed. Removing it from a vegetable-heavy meal can reduce what you take in from the vegetables themselves.

Myth: If a food is organic, it is a whole food.

Fact: Two separate questions. Organic describes how something was grown. Whole describes how much of it survived processing. A food can pass one test and fail the other.
