The Ingredients Nobody Explains to You.
PFAS are a family of thousands of synthetic fluorinated compounds, used since the 1940s to make paper, fabric and cookware resist grease, water and heat. Unlike most entries on this list, they are not added to food on purpose. They reach it through packaging, processing equipment, and contaminated water and soil. The carbon-fluorine bond that makes them useful is among the strongest in chemistry, so they do not meaningfully break down. That is where the name “forever chemicals” comes from. They build up in water, in crops, in livestock, and in people.
The US Agency for Toxic Substances and Disease Registry reports that epidemiological evidence “suggests associations” between higher PFAS exposure and increased cholesterol, lower antibody response to vaccines, changes in liver enzymes, pregnancy-induced hypertension and preeclampsia, small decreases in birth weight, and kidney and testicular cancer.
The regulatory picture is the part most people have backwards. There is no federal US ban on PFAS in food packaging. The main packaging use left the market in February 2024 because manufacturers agreed to stop selling it, following an FDA review of how long these compounds persist in the body. FDA then declared 35 food contact authorizations no longer effective in January 2025. That is a withdrawal, not a prohibition.
Four states passed actual bans on PFAS in food packaging: New York (December 2022), California (January 2023), Washington (February 2023, expanded May 2024) and Maine (May 2026). Where you live changes what is legal in the wrapper your food arrives in.
For drinking water, EPA finalized the first national PFAS limits on 10 April 2024, setting PFOA and PFOS at 4 parts per trillion. In May 2026 EPA proposed rescinding the limits for four of the six regulated compounds, and giving water systems until 2031 to meet the PFOA and PFOS standards.
The European Union has been working on a broad PFAS restriction since 2023. Its scientific committees issued opinions in March 2026. It is still not law.
Where Diet Discipline stands
ATSDR notes that animal studies found PFAS can damage the liver and the immune system, and caused low birth weight, birth defects, delayed development and newborn deaths in laboratory animals. It then adds that “humans and animals react differently to PFAS, and not all effects observed in animals may occur in humans.”
That caveat is scientifically fair, and it is not a reason to wait. Our position is that when a compound does that in animals and then does not break down in the environment or in the body, reducing exposure now is the reasonable move, rather than once the science finally closes. These compounds carry no nutritional value. They exist to keep grease from soaking through paper. That is a thin benefit to set against an open question about the immune system and about birth weight.
