Emulsifiers (Polysorbate 80, CMC)

Description:

Emulsifiers like Polysorbate 80 and carboxymethylcellulose (CMC) are synthetic additives used to blend ingredients that would normally separate, like oil and water. They give processed foods a smooth, stable texture and extend shelf life. Food manufacturers rely on them heavily because they make cheap ingredients look and feel premium.

  • Salad dressings and mayonnaise
  • Bread and baked goods
  • Non-dairy creamers and plant milks
  • Sauces, gravies, and condiments
  • Candy and chocolate coatings
  • Processed cheese products

Health Impact:

Research from Georgia State University found that emulsifiers like Polysorbate 80 and CMC can erode the protective mucus lining of the gut, allowing bacteria to come into closer contact with intestinal cells. This triggers low-grade inflammation linked to metabolic syndrome and weight gain. In mouse studies, these emulsifiers altered gut microbiota composition and promoted colitis in genetically susceptible animals. A 2021 randomized controlled trial in humans confirmed that CMC reduced gut bacterial diversity and altered microbiome composition after just 11 days of consumption. The European Food Safety Authority re-evaluated Polysorbate 80 in 2015 and flagged concerns about its impact on gut permeability.

Healthier Alternatives:

  • Egg yolks (natural emulsifier for dressings and sauces)
  • Mustard (stabilizes vinaigrettes naturally)
  • Lecithin from sunflower (cleaner emulsifier, found in some organic products)
  • Homemade dressings with olive oil, vinegar, and a pinch of mustard
  • Brands labeled “no artificial additives” or short-ingredient-list products
