Sodium Nitrite & Nitrates

Description:

Sodium nitrite and sodium nitrate are preservatives added to processed meats to stop bacterial growth, hold the pink color and build cured flavor. They are in nearly all cured, smoked and deli meats. The concern is not the nitrite on its own but what it can become: alongside protein breakdown products and high heat, nitrite can form N-nitroso compounds, which is the mechanism most often cited in the cancer research. Nitrate also reaches you from vegetables, in larger amounts, and that is a genuinely different situation. The reconciliation is below, because the difference is the whole point.

Health Impact:

The World Health Organization’s International Agency for Research on Cancer (IARC) classified processed meat as a Group 1 carcinogen in 2015, with nitrite-derived nitrosamines as a key mechanism. Consuming 50 grams of processed meat daily (about 2 slices of deli meat) was associated with an 18% increased risk of colorectal cancer. A 2006 meta-analysis in the Journal of the National Cancer Institute found consistent links between nitrite-preserved meat intake and stomach cancer risk. Research also suggests nitrosamines may contribute to insulin resistance and type 2 diabetes risk, with a 2010 Harvard study finding a 19% increased diabetes risk per daily serving of processed meat.

Then why is the Nutrition Hub positive about nitrates in beets and arugula? Because it is a fair question and the answer is not that one of those pages is wrong. The difference is not the molecule. It is what arrives with it.

Nitrate itself is fairly inert. It becomes nitrite, and nitrite can go two ways. Alongside vitamin C and plant polyphenols, the route toward nitric oxide is favored, which is the pathway the beetroot research is interested in. Alongside protein breakdown products and high, dry heat, the route toward N-nitroso compounds is favored, which is the pathway the processed meat research is interested in. Same starting material, different company, different destination.

The strongest evidence that this is really how it works is written into US law. Under 9 CFR 424.22(b)(1), pumped bacon must be made with 120 parts per million of sodium nitrite and 550 parts per million of sodium ascorbate or sodium erythorbate. Ascorbate is vitamin C and erythorbate is its close relative. The regulator’s own control on nitrite in bacon is to require vitamin C alongside it. A beet arrives with its vitamin C already in the package.

So the honest version is this. Vegetables are where most dietary nitrate comes from, and no major body advises eating fewer vegetables to reduce it. The concern on this page is about cured meat specifically, eaten often, cooked hot. Reading “nitrate” as a single verdict is the mistake, and it is the same mistake as reading “sugar” that way. The package does real work.

Healthier Alternatives:

Start with the swap that almost every list gets wrong. “Uncured” and “No Nitrate or Nitrite Added” do not mean what they sound like. Under the federal labeling rule, 9 CFR 317.17, those phrases describe a product made without added nitrate or nitrite. A product cured with celery powder or cherry powder qualifies, because the powder is the source instead of a jar of sodium nitrite. Celery powder is high in nitrate, and a starter culture converts it to nitrite inside the meat. The chemistry that follows is the same chemistry. That label is a statement about the ingredient list, not about what ends up in the food.

What actually changes the picture:

  • Fresh-cooked chicken, turkey or roast beef, sliced at home. This is the real swap, and it is the only one here that removes the cure rather than relabeling it.
  • Lower the cooking heat. Nitrosamine formation rises with high, dry heat. Bacon baked at a moderate temperature is not the same as bacon fried hard.
  • Change the frequency before you change the brand. Every risk figure in the research below is stated per daily serving. Moving from daily to weekly is a far larger change than switching to an uncured label.
  • Homemade jerky in a dehydrator with simple seasonings.
  • Smoked tofu or tempeh as a plant-based deli alternative.

Scientific Evidence:

  • IARC Working Group (2015, The Lancet Oncology): classified processed meat as a Group 1 carcinogen. N-nitroso compounds are one of several mechanisms discussed, alongside heme iron and compounds formed during high-heat cooking
  • Larsson, Orsini and Wolk (2006, Journal of the National Cancer Institute): meta-analysis linking processed meat consumption to increased stomach cancer risk
  • Pan et al. (2012, Archives of Internal Medicine): each daily serving of processed meat associated with higher all-cause mortality across two prospective cohorts. This entry previously credited this finding to Pan et al. 2011 in the American Journal of Clinical Nutrition, which is a different paper, on type 2 diabetes. Corrected 2026-08-27.
  • Micha et al. (2010, Circulation): meta-analysis showing 19% higher type 2 diabetes risk and 42% higher coronary heart disease risk per daily serving of processed meat. These are relative increases, not absolute ones
  • 9 CFR 317.17: the federal rule behind the words “Uncured” and “No Nitrate or Nitrite Added”. It describes a product made without added nitrate or nitrite
